Method
 

  1. Begin by preheating your oven to 375°F (190°C). The warmth will start to blend the flavors beautifully.
  2. In your cast-iron skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it's translucent, which should take about 5 minutes.
  3. In a mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper until the mixture is glossy and inviting.
  4. Stir in the chopped spinach and roasted red peppers, allowing the vibrant colors to shine. Fold in the crumbled feta for added flavor.
  5. Pour the egg mixture over the sautéed onions in your skillet. Cook on the stovetop for about 2-3 minutes until the edges start to set.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is puffed up and set in the center.
