- Season the chicken breasts generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for about 5-7 minutes per side until golden brown.
- Remove chicken from skillet, then add minced garlic and chopped sun-dried tomatoes, sautéing for 1-2 minutes until fragrant.
- Pour in heavy cream and chicken broth, scraping up any brown bits. Bring to a simmer and let it thicken for about 3-5 minutes.
- Return chicken to the skillet, sprinkle with feta and basil, and let simmer for an additional 2-3 minutes.
- Serve warm, paired with your choice of pasta, quinoa, or roasted vegetables.
