Tuscan Basil Chicken in 30 Minutes

  • 4 chicken breasts (about 1.5 pounds) boneless, skinless
  • Salt and pepper to taste
  • 1 Tbsp. olive oil
  • ½ cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth preferably low-sodium
  • 1 cup feta cheese, crumbled
  • 1 cup fresh basil leaves, chopped
  • 1 tsp. Italian seasoning

Method
 

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for about 5-7 minutes per side until golden brown.
  3. Remove chicken from skillet, then add minced garlic and chopped sun-dried tomatoes, sautéing for 1-2 minutes until fragrant.
  4. Pour in heavy cream and chicken broth, scraping up any brown bits. Bring to a simmer and let it thicken for about 3-5 minutes.
  5. Return chicken to the skillet, sprinkle with feta and basil, and let simmer for an additional 2-3 minutes.
  6. Serve warm, paired with your choice of pasta, quinoa, or roasted vegetables.

Notes

This dish can be made ahead and stored in the fridge for up to 3 days. Reheat gently and enjoy!
