  • 4 medium sweet potatoes
  • 1 lb. ground turkey
  • 1 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can black beans (15 ounces), rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 2 Tbsp. taco seasoning (store-bought or homemade)
  • 1 cup diced tomatoes (canned or fresh)
  • to taste salt and pepper
  • fresh cilantro, chopped (for garnish)
  • avocado, diced (for topping)
  • shredded cheese (optional, blended cheddar and Monterey Jack is great)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes, prick them with a fork, and place them on a baking sheet lined with parchment paper. Bake for 45-50 minutes until tender.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion; sauté for about 5 minutes until translucent.
  4. Stir in minced garlic and diced bell pepper; cook for another 3-4 minutes until softened.
  5. Add ground turkey, cook until browned, and season with taco seasoning, salt, and pepper.
  6. Incorporate black beans, corn, and diced tomatoes; let mix for about 5 minutes.
  7. Once sweet potatoes are baked, slice them and fluff the insides. Fill each potato with turkey mixture.
  8. Add toppings like diced avocado, shredded cheese, and fresh cilantro before serving.

Notes

Store leftover filling for up to 3 days. Sweet potatoes should be kept separate to avoid sogginess.
