Ingredients

Group: Ingredients
  • 2.5 lb. Yukon Gold potatoes, scrubbed and diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup cream cheese, softened
  • 1 cup ranch dressing (homemade or store-bought)
  • 1 cup cooked bacon, crumbled
  • ½ cup green onions, chopped (for garnish)
  • Salt and pepper to taste

Equipment

  • Slow cooker

Method

  1. Prepare the Yukon Gold potatoes by dicing them into bite-sized cubes. You can peel them if you prefer, but leaving the skins on adds texture.
  2. In a bowl, mix the softened cream cheese and ranch dressing until smooth and glossy.
  3. Add the diced potatoes to the slow cooker, pour the creamy ranch mixture over them, and sprinkle crumbled bacon and shredded cheddar cheese on top.
  4. Season with salt and pepper to taste. Use freshly cracked black pepper for an extra kick.
  5. Cover and cook on low for 4-5 hours until the potatoes are tender.
  6. Serve garnished with chopped green onions for added color and freshness.

Notes

Letting the slow cooker work its magic truly enhances the flavors of the ingredients, absorbing all the cheesy, herb-infused goodness.
