  • 1 lb. ground beef
  • ½ cup breadcrumbs (Japanese panko preferred)
  • ¼ cup finely diced onion
  • ¼ cup shredded carrots
  • 2 cloves garlic, minced
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 Tbsp. soy sauce
  • 1 tsp. sesame oil
  • 1 cup beef broth
  • ¼ cup soy sauce
  • 2 Tbsp. ketchup
  • 1 Tbsp. oyster sauce
  • 1 Tbsp. brown sugar
  • 1 Tbsp. cornstarch mixed with 2 tablespoons water (slurry)
  • Green onions for garnish

Method
 

  1. In a large bowl, combine the ground beef and breadcrumbs. Add diced onions, shredded carrots, and minced garlic. Season with salt, pepper, soy sauce, and sesame oil. Mix gently.
  2. Form mixture into thick patties. Heat a skillet over medium heat with oil and cook patties for 4-5 minutes on each side until golden and cooked through. Keep warm under foil.
  3. In the same skillet, add beef broth, soy sauce, ketchup, oyster sauce, and brown sugar. Simmer for 2-3 minutes. Stir in cornstarch slurry until gravy thickens.
  4. Nestle the hamburger steaks in the gravy, allowing to soak for a minute. Serve topped with gravy and green onions.

Notes

Be gentle when mixing ingredients to keep patties tender. Taste the gravy before serving to adjust flavors if necessary.
