  • 1 lb. kielbasa, sliced into rounds
  • 2 lb. Yukon Gold potatoes, diced
  • 2 cups green beans, trimmed
  • 3 Tbsp. olive oil
  • 2 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

  • Cast-iron skillet or large baking sheet
  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced Yukon Gold potatoes with 2 tablespoons of olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Spread the potatoes out in a single layer on a cast-iron skillet or a large baking sheet. Bake for 20 minutes, or until the potatoes begin to soften and turn golden.
  4. Remove the skillet from the oven, and sprinkle the sliced kielbasa among the potatoes. Drizzle with the remaining tablespoon of olive oil and give everything a gentle stir.
  5. Scatter the green beans over the top of the mixture. Season lightly with salt and pepper. Bake for an additional 15-20 minutes, or until the green beans are tender and the kielbasa is browned.
  6. Once cooked, remove the pan from the oven and garnish with freshly chopped parsley.

Notes

Ensure your oven is fully preheated before placing the skillet inside for even cooking.
