Method
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the diced Yukon Gold potatoes with 2 tablespoons of olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Spread the potatoes out in a single layer on a cast-iron skillet or a large baking sheet. Bake for 20 minutes, or until the potatoes begin to soften and turn golden.
- Remove the skillet from the oven, and sprinkle the sliced kielbasa among the potatoes. Drizzle with the remaining tablespoon of olive oil and give everything a gentle stir.
- Scatter the green beans over the top of the mixture. Season lightly with salt and pepper. Bake for an additional 15-20 minutes, or until the green beans are tender and the kielbasa is browned.
- Once cooked, remove the pan from the oven and garnish with freshly chopped parsley.
