  • 4 pieces bone-in, skin-on chicken thighs
  • 1.5 pounds Yukon Gold potatoes, quartered
  • 4 cloves garlic, minced
  • cup honey
  • ¼ cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon grated fresh ginger
  • Salt and pepper to taste
  • Green onions, for garnish
  • Sesame seeds, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Set aside a 10-inch cast-iron skillet for cooking.
  2. Pat chicken thighs dry with paper towels, season with salt and pepper, and place skin-side down in the skillet.
  3. Add the quartered Yukon Gold potatoes around the chicken and toss in olive oil to coat.
  4. Whisk together honey, soy sauce, minced garlic, and grated ginger in a small bowl.
  5. Pour the sauce evenly over the chicken and potatoes, then transfer the skillet to the oven and bake for 35 minutes.
  6. Remove from the oven, let rest a few minutes, then garnish with sliced green onions and sesame seeds before serving.

Notes

Ensure the chicken reaches an internal temperature of 165°F for safe consumption. Adjust cooking times as needed based on your oven.
