Method
 

  1. Start by patting the pork chops dry with paper towels. Season both sides generously with salt and black pepper and let them rest for about 15 minutes.
  2. Set up your breading station: Place flour in the first shallow dish, whisk the eggs in the second, and combine breadcrumbs, Parmesan cheese, garlic powder, oregano, and smoked paprika in the third.
  3. Dredge each pork chop in flour, dip into the egg mixture, then press into the breadcrumb mixture to coat fully.
  4. Heat olive oil in a large skillet over medium-high heat and sear the breaded pork chops for about 4-5 minutes on each side until golden brown, reaching an internal temperature of 145°F.
