Ingredients

  • 1 package (about 12 to 15 ounces) refrigerated cheese ravioli
  • 2 Tbsp. olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach, chopped (about one 5-ounce bag)

  • 1 can (28 ounces) crushed tomatoes
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 cups shredded mozzarella cheese
  • Grated Parmesan cheese for topping
  • Fresh basil leaves for garnish (optional)

  • 9x13-inch baking dish
  • Aluminum foil

Method
 

  1. Set your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
  3. Stir in the minced garlic and chopped spinach, cooking until the spinach wilts.
  4. Pour in the crushed tomatoes, season with dried basil, oregano, salt, and pepper, and let simmer.
  5. In a 9x13-inch baking dish, spread half of the tomato-spinach mixture. Layer ravioli on top, then pour remaining sauce over ravioli. Top with shredded mozzarella cheese.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 20 minutes until cheese is golden brown.
  7. Let sit for a few minutes before garnishing with Parmesan and fresh basil. Cut into squares and enjoy!
