  • 2 cups cooked chicken, shredded Rotisserie chicken works well for convenience.
  • 2 cups fresh spinach, roughly chopped
  • 1 can cream of chicken soup (10.5 ounces)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Sharp for a little kick.
  • 2 cups cooked pasta Elbow macaroni or rotini recommended.
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • ½ tsp. black pepper
  • ½ tsp. salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, chopped spinach, cream of chicken soup, and sour cream.
  3. Add in the cooked pasta, garlic powder, onion powder, black pepper, and salt. Gently fold until everything is evenly coated.
  4. Pour the mixture into a greased 9x13-inch casserole dish and spread evenly.
  5. In a small bowl, combine the breadcrumbs and olive oil. Mix until coated then sprinkle over the casserole.
  6. Bake for 30-35 minutes or until the top is golden brown and the center is bubbling.
  7. Let it rest for 10 minutes before serving.
