  • 4 pieces bone-in pork chops about 1 inch thick
  • Salt to taste
  • Pepper to taste
  • 2 Tbsp. olive oil
  • 4 Tbsp. unsalted butter divided
  • 4 cloves garlic minced
  • Fresh thyme sprigs for garnish

Method
 

  1. Bring the pork chops to room temperature and season with salt and pepper on both sides.
  2. Heat olive oil in a large cast-iron skillet over medium-high heat. Sear the pork chops until golden crust forms, about 4 to 5 minutes per side.
  3. Once flipped, lower heat to medium, add 2 tablespoons of butter, and spoon over the chops. Stir in minced garlic and let it brown.
  4. Cook until internal temperature reaches 145°F, about another 5 minutes. Remove from skillet and let rest for 5-10 minutes.
  5. Drizzle remaining garlic butter sauce over chops and garnish with fresh thyme.
