  • 2 cups all-purpose flour, plus more for the work surface
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt

  • ½ cup unsalted butter, cold and cut into cubes
  • ¾ cup buttermilk (plus extra for brushing)
  • 1 Tbsp. honey (optional, for a hint of sweetness)

Method
 

  1. Preheat your oven to 450°F (232°C). In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until thoroughly combined.
  2. Add the cold, cubed unsalted butter to the flour mixture. Using your fingertips, gently rub the butter into the flour until it resembles coarse crumbs.
  3. Create a well in the center of the mixture and pour in the chilled buttermilk, adding honey if desired. Mix gently until just combined.
  4. On a lightly floured surface, turn out the dough and pat it into a rectangle about ¾-inch thick. Use a sharp biscuit cutter to cut out biscuits.
  5. Arrange the biscuits on a baking sheet lined with parchment paper, brush with buttermilk, and bake for about 12-15 minutes.

Notes

Avoid overworking the dough for flaky biscuits. Cold butter is key, and always press straight down with the cutter.
