  • 1 cup cottage cheese low-fat preferred
  • 4 large eggs
  • ½ cup rolled oats
  • ½ tsp. baking powder
  • a pinch salt
  • 1 tsp. vanilla extract
  • butter or oil for the pan, coconut oil recommended

  • Non-stick skillet

Method
 

  1. In a blender or food processor, combine the cottage cheese, eggs, rolled oats, baking powder, salt, and vanilla extract. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter or coconut oil.
  3. Pour a ladleful of batter into the skillet. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
  4. Serve warm with your favorite toppings such as berries or maple syrup.

Notes

Allowing the batter to rest helps the oats soften, resulting in a better texture for the pancakes.
