Ingredients

  • 2 lb. bone-in, skin-on chicken thighs (or preferred cuts)
  • 3 Tbsp. gochujang (Korean chili paste)
  • 2 Tbsp. soy sauce
  • 2 Tbsp. honey
  • 1 Tbsp. sesame oil
  • 4 cloves garlic, minced
  • 1 Tbsp. freshly grated ginger
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. vegetable oil (for cooking)
  • 1 tsp. black pepper
  • 1 Tbsp. sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

  • Large bowl
  • Plastic wrap

Method
 

  1. In a large bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Whisk until smooth. Add chicken thighs, coat in marinade, cover with plastic wrap, and refrigerate for at least 1 hour, or up to overnight.
  2. Preheat your oven to 400°F (200°C).
  3. Heat vegetable oil in a large oven-safe skillet over medium-high heat. Add marinated chicken skin-side down, sear for 4-5 minutes until browned.
  4. Turn chicken over, then transfer skillet to the preheated oven. Bake for about 25-30 minutes until cooked through (juices run clear, internal temperature is 165°F).
  5. Let the chicken rest for about 5 minutes, then garnish with sesame seeds and sliced green onions before serving.

Notes

Ensure to let the chicken marinate for at least 1 hour for the best flavor. Monitor the cooking time to avoid drying out the chicken.
