- Start with chicken thighs, ensuring they're beautifully plump and nestled in your slow cooker.
- In a mixing bowl, combine honey, low-sodium soy sauce, minced garlic, minced ginger, and rice vinegar. Whisk together until well-blended.
- Pour the honey soy mixture over the chicken, cover, and set on low for about 4 to 6 hours.
- In the last 30 minutes, mix the cornstarch with a tablespoon of cold water to create a slurry and stir into the slow cooker to thicken the sauce.
