  • cup honey
  • cup low-sodium soy sauce
  • 1 Tbsp. minced garlic freshly minced
  • 1 Tbsp. minced ginger
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. cornstarch for thickening
  • 2 green onions, sliced for garnish
  • sesame seeds optional garnish

Method
 

  1. Start with chicken thighs, ensuring they're beautifully plump and nestled in your slow cooker.
  2. In a mixing bowl, combine honey, low-sodium soy sauce, minced garlic, minced ginger, and rice vinegar. Whisk together until well-blended.
  3. Pour the honey soy mixture over the chicken, cover, and set on low for about 4 to 6 hours.
  4. In the last 30 minutes, mix the cornstarch with a tablespoon of cold water to create a slurry and stir into the slow cooker to thicken the sauce.
  5. Once done, spoon the chicken onto your serving plate, drizzle with the thickened sauce, and sprinkle with green onions and sesame seeds.
