  • 1 lb. large shrimp, peeled and deveined
  • 1 lb. smoked sausage, such as Andouille, sliced into rounds
  • Red bell peppers, sliced
  • Yellow onion, sliced
  • Zucchini, sliced
  • 6 Tbsp. olive oil
  • 2 Tbsp. Cajun seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Grab a large baking sheet and toss in the sliced sausage, bell peppers, onion, and zucchini.
  3. Drizzle 4 tablespoons of olive oil over the veggies and sausage. Sprinkle the Cajun seasoning generously.
  4. Toss everything well, making sure they are distributed evenly. Roast for about 15 minutes.
  5. Add the shrimp, drizzle with the remaining olive oil, season with salt and black pepper, and toss gently.
  6. Roast for an additional 10-15 minutes or until the shrimp are pink, and opaque, and the veggies are tender.
  7. Garnish with freshly chopped parsley and serve straight from the pan.

Notes

Ensure to give space between ingredients on the sheet pan for even roasting. Using fresh shrimp is ideal for maintaining texture.
