  • 1 ¼ cups buttermilk
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. vanilla extract
  • ½ cup red food coloring

Method
 

  1. Start by gathering all your ingredients. Having everything ready to go makes the cooking process smooth and enjoyable.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, sugar, and cocoa powder. The rich chocolate aroma will fill the air as you whisk.
  3. In another bowl, beat the eggs, then add the buttermilk, vegetable oil, and vanilla extract. Stir in the vibrant red food coloring until it creates a striking mixture.
  4. Slowly pour the wet ingredients into the dry ingredients. Gently fold the mixtures with a spatula until just combined, being careful not to overmix.
  5. Heat a non-stick skillet or griddle over medium heat. Pour about ¼ cup of batter for each pancake onto the skillet. Flip when bubbles form on the surface and cook until fluffy and cooked through.
  6. Stack the pancakes on a plate and generously drizzle with cream cheese frosting for an indulgent finish.

Notes

Be cautious not to overmix the batter, as a few lumps are perfectly fine!
