Method
- Start by gathering all your ingredients. Having everything ready to go makes the cooking process smooth and enjoyable.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, sugar, and cocoa powder. The rich chocolate aroma will fill the air as you whisk.
- In another bowl, beat the eggs, then add the buttermilk, vegetable oil, and vanilla extract. Stir in the vibrant red food coloring until it creates a striking mixture.
- Slowly pour the wet ingredients into the dry ingredients. Gently fold the mixtures with a spatula until just combined, being careful not to overmix.
- Heat a non-stick skillet or griddle over medium heat. Pour about ¼ cup of batter for each pancake onto the skillet. Flip when bubbles form on the surface and cook until fluffy and cooked through.
- Stack the pancakes on a plate and generously drizzle with cream cheese frosting for an indulgent finish.
Notes
Be cautious not to overmix the batter, as a few lumps are perfectly fine!
