  • 4 pieces bone-in chicken thighs
  • 2 pieces chicken breasts
  • ΒΌ cup olive oil
  • 1 tsp. salt
  • 2 tsp. black pepper
  • 2 pieces lemons, zested and juiced
  • 4 cloves garlic, minced
  • 1 tsp. dried thyme
  • 1 tsp. paprika
  • fresh parsley, chopped (for garnish)

Method
 

  1. Pat the chicken dry with paper towels. In a bowl, mix olive oil, salt, black pepper, lemon zest, lemon juice, garlic, thyme, and paprika.
  2. Coat the chicken with the marinade and let it marinate for about 30 minutes at room temperature.
  3. Place the chicken in the slow cooker, pouring any remaining marinade over the top. Cover and slow cook on low for 6-7 hours.
  4. Shred the chicken with a fork and serve over rice or alongside roasted vegetables, garnished with fresh parsley.
