  • ¼ cup granulated sugar
  • ½ cup unsalted butter, softened

  • 2 large eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 ounces) cherry pie filling

  • ¼ cup powdered sugar

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the all-purpose flour and granulated sugar. Incorporate the softened butter until the mixture resembles wet sand.
  3. Firmly press the crust mixture into the bottom of an 8x8-inch baking dish and bake for 10 minutes.
  4. In a separate bowl, whisk together the sour cream, eggs, granulated sugar, and vanilla extract until smooth. Pour this filling over the crust and spread evenly.
  5. Spoon the cherry pie filling evenly over the sour cream layer.
  6. Bake for an additional 30-35 minutes until the filling has set but still jiggles slightly in the center.
  7. Allow the bars to cool in the dish, then sprinkle with powdered sugar.

Notes

Make sure to let the crust cool before adding the filling to prevent separation.
