Method
- Pat the chicken breasts dry and season both sides generously with salt and black pepper.
- In a skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.
- In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and stir for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping up any brown bits from the bottom. Stir in heavy cream, spinach, sun-dried tomatoes, and Italian seasoning. Simmer for about 2-3 minutes until slightly thickened.
- Return the chicken to the skillet, sprinkle Parmesan cheese over everything, cover, and simmer on low for about 10 more minutes until cooked through (internal temperature of 165°F).
- Remove from heat and garnish with fresh basil before serving.
Notes
For extra flavor, marinate the chicken in olive oil, lemon juice, and Italian herbs for at least an hour before cooking.
