- In a large skillet over medium heat, add a splash of olive oil and sauté diced onion and green bell pepper until softened. Add minced garlic and cook until fragrant.
- Add ground beef or turkey, breaking it up as it cooks. Drain excess fat after browning, ensuring the meat is cooked through.
- Stir in black beans, corn, diced tomatoes, chili powder, cumin, and salt and pepper. Let simmer for about 10 minutes.
- In a large baking dish, spread a layer of salsa on the bottom. Add a layer of uncooked noodles, half the meat mixture, ½ cup cottage cheese, and some shredded cheddar cheese.
- Continue layering with noodles, meat mixture, cottage cheese, and cheese. Finish with noodles and top with remaining salsa and cheese.
- Cover with foil and bake in a preheated oven at 375°F for 30 minutes. Remove foil and bake for an additional 15-20 minutes until top is golden brown.
