Delicious Texas Lasagna for Cozy Gatherings

This Texas Lasagna is a layered dish that combines the flavors of the Southwest with the comfort of classic lasagna, making it a perfect choice for holiday gatherings.

Ingredients
  

Group: For the Filling
  • 1 pound ground beef or turkey
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15-ounce) black beans, rinsed and drained
  • 1 can (15-ounce) corn, drained
  • 1 can (15-ounce) diced tomatoes with green chilies
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • to taste salt and pepper
Group: For the Layers
  • 8-10 pieces lasagna noodles, uncooked
  • 2 cups shredded cheddar cheese
  • 1 ½ cups cottage cheese
  • 1 ½ cups salsa
  • 1 cup sour cream

Equipment

  • Large skillet
  • Large baking dish
  • Aluminum foil
  • Oven

Method
 

  1. In a large skillet over medium heat, add a splash of olive oil and sauté diced onion and green bell pepper until softened. Add minced garlic and cook until fragrant.
  2. Add ground beef or turkey, breaking it up as it cooks. Drain excess fat after browning, ensuring the meat is cooked through.
  3. Stir in black beans, corn, diced tomatoes, chili powder, cumin, and salt and pepper. Let simmer for about 10 minutes.
  4. In a large baking dish, spread a layer of salsa on the bottom. Add a layer of uncooked noodles, half the meat mixture, ½ cup cottage cheese, and some shredded cheddar cheese.
  5. Continue layering with noodles, meat mixture, cottage cheese, and cheese. Finish with noodles and top with remaining salsa and cheese.
  6. Cover with foil and bake in a preheated oven at 375°F for 30 minutes. Remove foil and bake for an additional 15-20 minutes until top is golden brown.
