  • ¼ cup granulated sugar
  • 1 Tbsp. lemon juice
  • 1 Tbsp. cornstarch
  • 1 tsp. pure vanilla extract

  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ½ tsp. ground cinnamon
  • ¼ tsp. salt
  • ½ cup unsalted butter, melted

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced strawberries, granulated sugar, lemon juice, cornstarch, and vanilla extract. Stir gently until the strawberries are evenly coated.
  3. In another bowl, combine rolled oats, flour, brown sugar, ground cinnamon, and salt. Drizzle in the melted butter and mix until coarse crumbles form.
  4. Transfer the strawberry mixture to a 9x9-inch baking dish and spread it out evenly. Scatter the oat topping generously over the strawberries.
  5. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbling at the edges.
  6. Allow to cool for about 10-15 minutes before serving with ice cream or whipped cream.

Notes

Allow the crisp to cool before serving to thicken the filling, enhancing the flavor.
