  • 2 Tbsp. pure maple syrup (or honey)
  • 1 tsp. pure vanilla extract
  • ½ tsp. ground cinnamon
  • A pinch sea salt

  • 1 cup fresh strawberries, hulled and sliced
  • Optional toppings: additional sliced strawberries, shredded coconut, or granola

Method
 

  1. In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, vanilla extract, ground cinnamon, and sea salt. Let it sit for about 10 minutes to allow the chia seeds to swell and thicken.
  2. After 10 minutes, stir the mixture to prevent clumping. Cover and refrigerate for at least 2 hours or overnight.
  3. When ready to serve, slice the fresh strawberries and layer them with the chia pudding in glass cups.
  4. Top with additional strawberries, shredded coconut, or granola for added texture and flavor.

Notes

Letting the mixture sit in the fridge overnight enhances the flavor depth, making it even more delicious.
