  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 Tbsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. cream of tartar
  • 1 tsp. ground cinnamon
  • ¼ tsp. salt
  • ½ cup granulated sugar (for topping)
  • 1 Tbsp. ground cinnamon (for topping)

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, add melted butter, brown sugar, and granulated sugar. Whisk until smooth. Add eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cream of tartar, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  5. Pour the batter into the prepared pan and spread it evenly. In a small bowl, combine granulated sugar and ground cinnamon for the topping.
  6. Sprinkle the cinnamon sugar mixture over the batter. Bake for 20-25 minutes until edges are set and center is slightly jiggly.
  7. Cool in the pan for 15 minutes, then transfer to a wire rack. Once cool, cut into squares.

Notes

Make sure not to overmix the batter to avoid tough blondies. Also, keep an eye on them while baking to ensure they stay chewy.
