  • 4 pieces boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 tsp. Italian seasoning

  • ½ cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Fresh basil, for garnish

Method
 

  1. Pat the chicken breasts dry with paper towels and season them generously with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for 6-7 minutes on each side until golden brown.
  3. Add minced garlic and Italian seasoning to the skillet, sautéing for about 1 minute until fragrant.
  4. Pour in the chicken broth, scraping the skillet bottom. Bring to a gentle simmer, then stir in the heavy cream and Parmesan until smooth.
  5. Mix in the spinach, allowing it to wilt into the sauce.
  6. Return the chicken to the skillet, spooning the sauce over it. Let it simmer for another 3-5 minutes until fully cooked.
  7. Garnish with freshly chopped basil before serving.
