  • 1 cup buttermilk, at room temperature
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 cup boiling water
  • 1 cup cherry pie filling (homemade or canned)

  • ½ cup unsalted butter, softened to room temperature
  • cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • cup milk
  • 1 tsp. vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 13x18 inch baking sheet.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the buttermilk, oil, eggs, and vanilla extract. Whisk until smooth, then gradually pour into the dry ingredients and stir until just combined.
  4. Carefully stir in the boiling water until you have a glossy batter.
  5. Gently fold in the cherry pie filling.
  6. Pour the batter into the prepared baking sheet and bake for 30-35 minutes or until a toothpick comes out clean.
  7. While the cake cools, make the frosting by creaming together the butter and cocoa powder, then gradually adding the powdered sugar and milk until smooth. Stir in the vanilla.
  8. Once the cake is cool, spread the frosting evenly over the surface and let it cascade down the edges.
  9. Slice into generous squares and serve.
