Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 1 cup celery, chopped
  • ½ cup green onions, sliced
  • 1 cup cashews, roughly chopped
  • 1 cup red grapes, halved
Group: Dressing Ingredients
  • ½ cup mayonnaise
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. lemon juice
  • Salt and pepper to taste

Method
 

  1. Shred or cube the cooked chicken if not done already.
  2. In a large mixing bowl, combine the chicken, celery, green onions, cashews, and grapes.
  3. In a smaller bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until smooth.
  4. Pour the dressing over the chicken mixture and gently fold together.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

This salad is best when chilled. Consider using Greek yogurt for a healthier option.
