Delicious Caprese Sandwich for Quick Lunches

  • 8 oz. fresh mozzarella cheese Preferably in brine
  • 2 large ripe tomatoes Heirloom or vine-ripened recommended
  • 1 small bunch fresh basil leaves
  • 2 Tbsp. extra virgin olive oil
  • balsamic glaze To taste
  • salt To taste
  • freshly cracked black pepper To taste
  • 2 slices bread Ciabatta or rustic loaf recommended

  • Non-stick skillet Optional for grilling

Method
 

  1. Slice fresh mozzarella and tomatoes into thick pieces.
  2. Drizzle olive oil on one side of a slice of bread, then layer mozzarella, basil, and tomatoes. Season with salt and pepper.
  3. Drizzle balsamic glaze over the tomatoes and top with another slice of bread, olive oil side down.
  4. Optionally grill the sandwich in a skillet over medium heat for 3-4 minutes on each side until golden and the cheese melts.
  5. Slice in half, serve, and enjoy with extra balsamic glaze on the side.

Notes

Using fresh, ripe ingredients is key for the best sandwich flavor.
