  • 1 cup cooked bacon, chopped
  • 1 cup shredded sharp cheddar cheese
  • ½ cup red onion, finely chopped
  • ¾ cup unsalted roasted cashews

  • ½ cup mayonnaise
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. honey
  • Salt and pepper to taste

Method
 

  1. Begin by bringing a large pot of salted water to a boil. Toss in the fresh broccoli florets and blanch them for just 2-3 minutes. Dunk the broccoli into an ice bath to stop the cooking process and pat it dry.
  2. In a large mixing bowl, combine the blanched broccoli, crispy bacon, cheddar cheese, finely chopped red onion, and cashews. Toss gently to mix.
  3. In a separate bowl, whisk together mayonnaise, apple cider vinegar, and honey until smooth. Season with salt and pepper.
  4. Drizzle the dressing over the salad mixture and fold everything gently until coated. Chill in the refrigerator for at least 30 minutes before serving.

Notes
