Crispy Ritz Parmesan Chicken

Lightly pound chicken breasts, dredge in seasoned flour, egg, and a mixture of Ritz crackers and Parmesan before sautéing and baking.

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup crushed Ritz crackers
  • ½ cup grated Parmesan cheese
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. paprika
  • Salt and pepper, to taste
  • 2 large eggs
  • ½ cup all-purpose flour
  • 4 Tbsp. unsalted butter
  • 2 Tbsp. olive oil

Equipment

  • Oven
  • Shallow bowls
  • Meat mallet

Method
 

  1. Preheat your oven to 375°F.
  2. Lightly pound the chicken breasts to an even thickness of about 1 inch.
  3. Set up your dredging station with seasoned flour, whisked eggs, and a mixture of Ritz crackers, Parmesan, garlic powder, onion powder, and paprika.
  4. Dredge each chicken breast in flour, dip into egg, then press into the Ritz mixture.
  5. In a large skillet over medium heat, add butter and olive oil until melted.
  6. Sauté the chicken for 4-5 minutes on each side until golden brown.
  7. Transfer the skillet to the oven and bake for another 10-15 minutes until cooked through.
  8. Serve hot with a sprinkle of parsley and your favorite sides.

Notes

Allow the chicken to rest for a few minutes after cooking to keep the juices locked inside.
