Method
- Preheat your oven to 375°F.
- Lightly pound the chicken breasts to an even thickness of about 1 inch.
- Set up your dredging station with seasoned flour, whisked eggs, and a mixture of Ritz crackers, Parmesan, garlic powder, onion powder, and paprika.
- Dredge each chicken breast in flour, dip into egg, then press into the Ritz mixture.
- In a large skillet over medium heat, add butter and olive oil until melted.
- Sauté the chicken for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for another 10-15 minutes until cooked through.
- Serve hot with a sprinkle of parsley and your favorite sides.
Notes
Allow the chicken to rest for a few minutes after cooking to keep the juices locked inside.
