- Start by melting the butter in a medium saucepan over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
- Pour in the heavy cream, whisking gently until glossy and smooth. Wait until soft bubbles form along the edges.
- Reduce heat to low and gradually stir in the shredded white cheddar and Monterey Jack cheese until melted and creamy.
- Add the chopped spinach and let it wilt for 1-2 minutes. Stir in the diced green chilies.
- Taste and season with salt as desired. Serve warm with tortilla chips or fresh veggies.
Notes
Don’t rush the cheese melting. Use low heat to help the cheese melt gradually.
