Ingredients
  

Base Ingredients
  • 2 Tbsp. butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
Cheeses
  • 1.5 cups shredded white cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Vegetables
  • 1 cup fresh spinach, roughly chopped
  • 1 can diced green chilies (4 oz)
Seasoning
  • Salt to taste

  • Medium saucepan

Method
 

  1. Start by melting the butter in a medium saucepan over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  2. Pour in the heavy cream, whisking gently until glossy and smooth. Wait until soft bubbles form along the edges.
  3. Reduce heat to low and gradually stir in the shredded white cheddar and Monterey Jack cheese until melted and creamy.
  4. Add the chopped spinach and let it wilt for 1-2 minutes. Stir in the diced green chilies.
  5. Taste and season with salt as desired. Serve warm with tortilla chips or fresh veggies.

Notes

Don’t rush the cheese melting. Use low heat to help the cheese melt gradually.
