  • 2 lb. boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or coconut milk for a dairy-free version)
  • 1 cup fresh cilantro, chopped
  • 1 tsp. ground cumin
  • Salt and pepper to taste

Method
 

  1. Place the boneless, skinless chicken breasts at the bottom of your slow cooker. Season generously with salt, pepper, and ground cumin, rubbing it in with your hands.
  2. Add the drained black beans, corn, diced red bell pepper, diced onion, and minced garlic over the chicken.
  3. Pour the chicken broth over the mixture and squeeze in the fresh lime juice.
  4. Cover your slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  5. Once done, shred the chicken in the pot, stir in the heavy cream (or coconut milk) and fresh cilantro, then let it simmer for an additional 15 minutes.
  6. Serve over rice or with warm tortillas.

Notes

For a spicy kick, add sliced jalapeños or cayenne pepper. This dish can be prepared ahead of time for deeper flavor.
