- Place the boneless, skinless chicken breasts at the bottom of your slow cooker. Season generously with salt, pepper, and ground cumin, rubbing it in with your hands.
- Add the drained black beans, corn, diced red bell pepper, diced onion, and minced garlic over the chicken.
- Pour the chicken broth over the mixture and squeeze in the fresh lime juice.
- Cover your slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
- Once done, shred the chicken in the pot, stir in the heavy cream (or coconut milk) and fresh cilantro, then let it simmer for an additional 15 minutes.
- Serve over rice or with warm tortillas.
Notes
For a spicy kick, add sliced jalapeños or cayenne pepper. This dish can be prepared ahead of time for deeper flavor.
