  • 2 Tbsp. extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • salt and freshly ground black pepper, to taste
  • 8 ounces ditalini pasta
  • fresh parsley, chopped (for garnish)
  • grated Parmesan cheese (for serving, optional)

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and sauté for another minute.
  3. Add the chickpeas, diced tomatoes, vegetable broth, oregano, and thyme. Season with salt and pepper. Bring to a gentle simmer.
  4. Once simmering, add the ditalini pasta. Cook for about 10 minutes or until al dente, stirring occasionally.
  5. Serve warm, garnished with fresh parsley and a sprinkle of Parmesan cheese if desired.

Notes

Allowing the dish to sit for about 10 minutes before serving allows the flavors to deepen.
