  • 1 lb. boneless, skinless chicken thighs
  • 2 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 medium red bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1 tsp. smoked paprika
  • ½ tsp. ground cinnamon
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

  • 10-inch cast-iron skillet

Method
 

  1. Season the chicken thighs with salt, pepper, smoked paprika, and a pinch of ground cinnamon.
  2. In a 10-inch cast-iron skillet, heat the olive oil over medium heat. Add the sweet potatoes and sauté for about 8-10 minutes until they begin to soften.
  3. Add the chopped onion and red bell pepper to the skillet, sauté for an additional 5 minutes.
  4. Push the vegetables to one side of the skillet and add the seasoned chicken thighs. Brown for about 5 minutes on each side.
  5. Add the minced garlic and stir for about a minute. Pour in a splash of water to deglaze and let simmer for another 10-12 minutes until the chicken is cooked through.
  6. Garnish with fresh parsley before serving.
