  • 2 cups dried green split peas, rinsed and drained
  • 1 large onion, diced
  • 2 large carrots, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced

  • 1 ham hock or 1 pound diced ham (smoked, for depth)
  • 6 cups low-sodium vegetable or chicken broth

  • 1 tsp. dried thyme
  • Salt and black pepper to taste

Method
 

  1. Start by adding the rinsed split peas, diced onion, carrots, and celery into your slow cooker.
  2. Toss in the minced garlic, thyme, bay leaf, and the smoked ham hock or diced ham.
  3. Pour in the broth, ensuring everything is well submerged. Season lightly with salt and pepper, cover the slow cooker and let it work its magic on low for 6 to 8 hours, or on high for 4 to 5 hours.
  4. Once cooked, if you prefer a creamier texture, use an immersion blender directly in the slow cooker to puree some of the soup.
  5. Remove the bay leaf and ham hock. Shred any meat that has loosened and mix it back into the soup. Taste one last time and adjust seasoning.
  6. Ladle the soup into bowls, garnishing with freshly chopped parsley and serve with crusty bread or crackers.
