- In a large pot of salted boiling water, cook the pasta according to package instructions until al dente, about 8-10 minutes.
- In a medium saucepan over medium heat, drizzle the olive oil and add the minced garlic. Sauté until the garlic is aromatic and lightly golden.
- Lower the heat, then stir in the vegetable broth, hummus, and lemon juice. Whisk until the sauce is smooth and glossy.
- Drain the pasta, reserving about ½ cup of the pasta water. Add the pasta into the hummus sauce and toss gently to coat.
- Add freshly cracked black pepper and salt to your preference. Serve topped with chopped fresh parsley.
Notes
Leftover hummus sauce can also serve as a dip for veggies or crackers.
