Ingredients

Group: Ingredients
  • 12 ounces pasta (whole wheat or chickpea recommended)
  • 1 cup creamy hummus (homemade roasted garlic is ideal)
  • 1 cup vegetable broth (low-sodium preferred)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon lemon juice
  • freshly cracked black pepper, to taste
  • salt, to taste
  • chopped fresh parsley, for garnish
  • optional: red pepper flakes or a sprinkle of za'atar

Equipment

  • Large pot
  • Medium saucepan
  • Whisk
  • Serving plates

Method

  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. In a medium saucepan over medium heat, drizzle the olive oil and add the minced garlic. Sauté until the garlic is aromatic and lightly golden.
  3. Lower the heat, then stir in the vegetable broth, hummus, and lemon juice. Whisk until the sauce is smooth and glossy.
  4. Drain the pasta, reserving about ½ cup of the pasta water. Add the pasta into the hummus sauce and toss gently to coat.
  5. Add freshly cracked black pepper and salt to your preference. Serve topped with chopped fresh parsley.

Notes

Leftover hummus sauce can also serve as a dip for veggies or crackers.
