  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 2 tsp. vanilla extract

  • 1 cup fruit preserves (raspberry or strawberry)
  • 1 tsp. cornstarch (if making your own filling)

  • 1 cup powdered sugar
  • 2 Tbsp. milk
  • ½ tsp. vanilla extract
  • Sprinkles for decoration

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter with both sugars until fluffy and light, about 2-3 minutes.
  4. Add in the egg and vanilla extract, mixing until fully incorporated.
  5. Gradually mix the dry ingredients into the wet ingredients, using a spatula for the last turns.
  6. If making your own filling, combine fruit preserves with cornstarch in a saucepan over low heat until warmed and thickened.
  7. Using a cookie scoop, drop spoonfuls of dough onto a parchment-lined baking sheet, pressing the center slightly to create space for filling.
  8. Place a small dollop of filling into the center of each cookie, then cover with another small amount of dough.
  9. Bake for 12-15 minutes until edges are golden and let cool.
  10. While cooling, whisk together icing ingredients until smooth; drizzle over cooled cookies and decorate with sprinkles.
